Based on the clue, it should really be SPHRAGISTICS with an S on either end.  :D

Methinks chumloofah has a point. Without the S it's an adjective, with, it's a noun.

Unless you're american and abbreviate said plural noun to math instead of maths.
But that doesn't make any sense.

No, but your explanation doesn't really make sense either, since non-Americans are perfectly happy to use nouns ending in -ic, like 'music', 'rhetoric', 'logic' or 'magic'. So from that point of view, there's no obvious reason why it should be 'sphragistics' rather than 'sphragistic'.
