Actually, "C2-H5-OH" is wrong. Empirically it's C2H6O (only with the numbers as subscripts which I can't do here), and as Flop pointed out, CH3-CH2-OH gives the structure, distinguishing it from, say, CH3-O-CH3 which I believe can exist (it's been a while since I did any chemistry).  EDIT: Yup, it's dimethyl ether - empirically the same as ethanol but chemically quite different.
The distinction is much more important with more complex molecules - even the next simplest alcohol has two diferent forms, CH3-CH2-CH2-OH and CH3-CH(OH)-CH2-CH3

But would CH3-O-CH3 still be a type of alcohol? I always thought an alcohol needs to have at least one OH group somewhere?:)

Nope, it's dimethyl ether - you're right, alcohols have at least one OH on them. It's got the same empirical formula as ethanol though.

Ethanol's pretty flammable - I managed to set fire to a table in biology once with that stuff. More fun than just boiling a leaf, though :)
