KOTOR was indeed very nicely done, wouldn't call it original in those senses though, Deus Ex did the same with decision making and there was a ps1 rpg done by Konami that did the whole choosing if you want to have a character live or die sort of idea.

Think another rpg that should be mentioned is Final Fantasy 4, especially it's timing when it was released in 91, had the makings and influence on later rpgs with some aspects story, characters and more.

May not be one of the most recognized, but always thought Secret of Mana was a great game. With it's real time fighting and 2 other characters, and the fact you could have 3 players play in the game too in battles, that was innovative for the time on the consoles.

Agreed. I can think of a few more which come close. The Baldurs Gate games are great, imo, so is the first Fallout.

Indeed the Baldurs Gates ones are classic, always liked the first one, not the console ones though, granted those were entirely different.

Earthbound mentioned earlier, reason being because it changed the whole seriousness of rpg's and fantasy idea with a modern setting, anyone who has played it know what I means, definitely one of the top ones on the snes.
